INGREDIENTS:
- 2 organic eggs
- 60 ml organic oat milk
- 1 tablespoon organic honey
- 1 1/4 cup almond flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- any berries your prefer - raspberry, blueberry, blackberry, strawberry

INSTRUCTION:
- In a big bowl, whisk together the eggs, oat milk and honey, then tip in the almond flour, baking powder, salt and vanilla extract. Mix well till lump dissolves.
- Heat a non-stick frying pan over a medium-low heat. Brush an olive oil or butter. Add a couple of heaped tablespoons of the batter and cook until the edges are set, around 2 - 3 mins. Flip and cook for a further 2 mins until golden brown. Repeat with the remaining batter. Serve the pancake in a small stacks, scattered with the berries you preferred. Optional: you can drizzle honey on top if you like.

TIPS:
- I recommend to find organic ingredients as much as possible, this way you know that what you are eating are free from pesticides and other harmful substances that could affect our health.
- You can use any other kind of plant base milk of your choice. Avoid using full cream or fresh milk as they have a higher calorie content.
