Healthy Banana Almond Four Muffin

 


This recipe is best way to save your banana from throwing. Aside from a healthy list of ingredients, they are easy to find in your kitchen, too! 


INGREDIENTS:
  • 2 large or 3 small ripe organic bananas
  • 2 organic or free range eggs
  • 1/4 cup creamy almond butter
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 1/4 cup almond flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 cup chopped walnuts

Prep Time: 10 mins     Cook Time: 18 - 22 mins   Serving:  12 muffins



INSTRUCTIONS:
  1. Preheat oven to 170°C.
  2. Use potato masher or fork to mash bananas in a plate or large bowl. 
  3. In a large bowl, add the eggs, almond butter, honey and vanilla, then whisk to combine.                                                                                                                                   
                                                                                                       
  4. Add the flour, baking soda, baking powder and cinnamon to the bowl and gently mix everything. If you are adding walnuts, gently fold them in. 
  5. Line the cupcake liner on the baking pan. Divide the batter evenly, then bake the muffins for 18 - 22 mins or until a toothpick comes out clean. 
  6. Remove from the oven and allow the muffins to sit in the tin for 2 mins, then carefully remove them and transfer to a cooling rack. Enjoy!

TIPS:
  • It would be best to use a slightly overripe banana. This will give a sweet taste to the muffin and they can be mashed easily. Overripe bananas are rich in antioxidants. When you consume them, overripe banana helps boost immunity which prevents several diseases. Not just that, they also help in preventing the cells from getting damaged. [1]
  • Let the muffin cool down to harden. By this, the shape will form well and you will be able to hold it better when consuming it.
  • Consume it within 1 - 3 days since it has bananas (fresh fruit). I would suggest to put the remains on the fridge to slow down the expiration.
