Quick and Easy Healthy Breakfast Omelette


If you are looking for a simple, easy to make yet nutritious breakfast this could be one of the best option. Aside from easy to access ingredients, they are easy to make too! 



INGREDIENTS:
  • 2 organic eggs
  • 1 cup organic spinach
  • 8 organic cherry tomatoes
  • pinch of 100% sea salt
  • pinch of black ground pepper
  • 1 tablespoon extra virgin olive oil 

Prep Time:  5 mins     Cooking Time:  10 mins     Serving: 1




INSTRUCTIONS:
  1. Wash all the vegetables thoroughly. Remove the tomatoes' seeds.     
  2.  Beat the eggs in a small bowl. Add salt and ground pepper respectively.
  3.  Heat the frying pan in a high heat setting initially, add the olive oil, then lower it down to medium heat once its heat enough.
  4. Fry the tomatoes until golden brown. Then set aside.
  5. On same pan, put the spinach. Ensure that the water was drained properly. Simmer till its half cook. 
  6. Then put the beaten eggs. Spread all the ingredients evenly and wait for the eggs to cook.

  7. Serve while its hot. Enjoy!

TIPS:
  • Although tomatoes is full of goodness, moderate intake of tomatoes with the seeds will not impact health, but people suffering from gastrointestinal issues must avoid the intake of raw tomatoes or tomato seeds as its acidic nature may trigger heartburn and have adverse effects on the digestive system.   • Always start with small seasonings and adjust along the way depending on your taste. And at the same time be mindful of the contents. Some of the condiments has other mixtures, but I recommend to buy it raw.
  • Why I love adding spinach in omelette? The fiber in this green leafy vegetable has been shown time and again as being able to fight oxidative stress, and cancerous cells growths (including those that form bones), and promote satiety so you feel full longer after eating it which may help manage diabetes symptoms if eaten regularly or even just once for breakfast each morning! 
  • Just use organic ingredients if possible to avoid pesticides and other harmful chemicals.
